Butter, Baby

Butter is my baby.  It lends itself so well to so many things.  So giving, so considerate, so kind…so yummy!  Now, if only I could meet a man like this! ;)

Butter makes everything better, no?  I’ve been known to hoard several boxes of butter “just because.”  Who knows when the mood will strike and I’ll want to reach for a couple sticks to transform into buttercream or pastry?

I’m not ashamed to admit that this is precisely what happened to me last night after Mr. Insomnia abducted me from any restful sleep.  2 am found me in the kitchen, dusted with flour, greedily clutching sticks of butter, cubing into tiny pieces (to allow to rapidly come to room temperature), with an abundance of free flowing chocolate and cranberry bits to make these:

These are just these minus the chocolate chips, plus 1 c each of dried cranberries and white chocolate chips (I love it with apricots too)!

Technically, these were dessert following dinner, despite the fact that dinner was several hours before, lol.

On board with the butter theme, these are the most delicious imported French butter croissants.  More butter was used for the roux in the Béchamel sauce.  Whole wheat pasta + turkey bacon + caramelized onions and garlic + spinach.

So, what’s my favorite butter?

I can almost always find coupons for this so that’s a plus.  Its gotta be unsalted, sweet cream butter and it’s l0vely for both baking and smearing on toast with jam.  Yum!

For my folks that don’t/can’t consume butter, this is a great alternative that I highly recommend if for example, you’re hankering for some homemade cookies:

Trader Joe’s also has a more affordable option for coconut oil.  “Good fat” that’s neutral in flavor so you can utilize it for baking all sorts of yummies or, even stir fries.

  • Butter is one of my best friends. :P I’ve been unable to sleep often at around that time of night, but I’ve never thought of getting up and making cookies! That’s a fantastic idea and good use of time. :P

    I love butter too! I couldn’t live without it even though I use it in scarce amounts. I have never used coconut oil, but I will one day. I’m sure I would love it. I love coconut and every associated product.

      I love Coconut Oil…I’ve been using it as a salve, nail treatment, and “eye cream” as of late ;)

    I like your thinking – if you wake up with a hankering for cookies and didn’t have dessert at dinner, well, it’s just your overdue dessert from earlier! Oh, and those cookies in your photos look amazing!

    And you’re right about butter. It DOES make everything better. I love my toast slathered in butter and then honey or raspberry jam…or peanut butter on top of butter. Is that wrong?

    butter is my number one choice for fat, but coconut oil runs a close second! can you imagine a world without butter? i shudder to think!

    Angie.As I mentioned in a previous blog I have LOVED butter ever since I was a child.Used to grab and eat it as a 4 year old.lol In my early fifties now I can not eat as much of it as I would like to. I feel butter may be better than some of these spreads, etc they have out now, well that is a whole different subject,lol.
    Every thing you baked looks delicious Angie.

    Angie.If ever you decide to cook at night during a sleepless night and you begin to feel tired, Immediately please turn your oven off put every thing in the fridge finish it the next day. I have seen a few horrible coking fires due to some one falling asleep while cooking at night.

      I made a lemon butter compound yesterday and thought to myself for the umpteenth time, just how much I love butter =D
