Garlic Yogurt Dressing

As I’m in the South, I day dream that we’re all just part of a Harlequin romance novel and that these are just parts of sultry, summer nights but alas, reality settles in and it’s just crazy hot, is all.  101, 105, 110…and rising.  It’s just hot.  Not sexy.  The weekend was full of impromptu storms and angry spills of hail and it’s suppose to thunderstorm all week, too.  My neighbors tree even cracked.  We’re living in those days when just stepping outside feels like suffocating–it’s a perpetual sauna with no mirage in sight.  I feel sorry those who have to make a living being outside all the time.  I had a friend who used to pour concrete and boy oh boy is that terrible to do when it’s hot like this.

I tried to keep cool with watermelon slushies:

Blended cubes of frozen watermelon + lime (or mint)+ agave (water as needed) = delicious refreshment.

Frozen Cheesecake.  I love Cheesecake so I shrugged, threw caution to the wind and ordered it.  The texture is different but the flavor is there and the cool bites are a welcome luxury in this heat.

Garlic Yogurt Dressing

Ingredients
  • ½ c Greek Yogurt
  • 2-4 tb Extra Virgin Olive Oil
  • 1-2 cloves of Garlic
  • Fresh Dill or Parsley
  • S & P

Instructions
  1. In a bowl, whisk to combine.

 

{Light summer salad of baby spinach, almonds, olives, local tomatoes, grilled chicken and garlic-yogurt dressing}.

I also love this salad with berries & grilled shrimp.

Now, if only the skies would open up momentarily and allow some snow to fall to alleviate us of this bitter heat, we could all have snow cream too :)

    We are experiencing a heatwave also and a bowl of that watermelon slush would hit the spot right now so will the frozen cheesecake. It’s watermelon season so I am going to freeze watermelon cubes to make slushies, thanks for the idea.

      If you’re like me, you’ll peek into the waaay back of your freezer in say, January and be sooo excited to see watermelon there =D

    Watermelon is my favourite cooling fruit. It’s so much better than water, ice-cream or anything really. I always have cheesecake straight from the fridge, so a frozen one must taste even better when it’s hot. Your slushie will be difficult to forget. Thank you for sharing this wonderful idea.

      I love freezing stuff….it’s like a miracle when I have these slushies in the dead of winter (bc of course, I’m a weirdo and enjoy slushies when it’s 20 out, too) LOL

      I’m not ashamed to say that I kind of hoard it during the summer season and try to eat as much as I can…it’s my own personal red, squishy buffet =D

      My gf just returned from Japan and she said it was crazy expensive there, too…and that they were square, lol.

  18. Although I love summer more than the cold weather we’re having in Australia right now, hot and humid with thunderstorms doesn’t sound all that appealing either. :P I want to live in a place where the temperature is always 25-30C, I wonder if there’s a place like that…
    Frozen cheesecake and watermelon slushie sounds so fantastic though, I can have those in my heated living room! :)
