When Life Gives you …Pecans

I spent the first part of my day with some Korean entrepreneurs, conversing with them about the local Korean community, particularly in the realms of food and culture and had a lovely lunch with an old family friend who’s health is ailing.  This week has already been a flurry of activity and due to my staunch type a personality, I’m almost always on the go which aids in being industrious but does nothing for my sanity, lol—it’s almost a chore for me to stop and soak everything in (like my bread pudding).  I [literally] have to remind myself to breathe.  I took the moment today to “stop and smell the roses,” if you will and realized that I am so abundantly blessed and was so humbled by this realization that though I carry with me always, isn’t allowed to marinate quite long enough due to the frenzy that can be life.  I feel so incredibly blessed everyday to be able to share my love and passion with as many people who will listen.  I am grateful for my family, my health–to have a roof over my head and a soft and warm bed to sleep in…there’s just so much to be thankful for.  Our friend is going into surgery soon, and we don’t see her nearly enough.  I can’t imagine dealing with intense physical pain each and every day of my life like that.  Despite this, she goes through life with such an admirable level of faith, resilience, and joy.  She is such an inspiration.  She’ll be traveling to spend time with her family this Thanksgiving but we’re all spending Christmas together and I’m really looking forward to it.  Please keep her in your thoughts and prayers.

I’m also looking forward to my Aunties dinner tonight.  Tonight will be the first time I’m actually sitting down to a meal that wasn’t completely put together by yours truly and it’s Korean food so I’m excited!  That, and the entire family is going out to celebrate (will share with y’all the occasion soon) for ice cream afterwards (or fro-yo, depending on who has peppermint…I’ve been craving it something fierce).  Speaking of ice cream, I’ve swapped the original desserts for Pecan Pie and Butter Pecan Ice Cream.  Last week, I went to the dentist and found out I’ll be getting my wisdom tooth extracted.  Right before I woke up, I had a dream about a pecan tree and chalked it up to randomness but when I arrived for my appointment, I noticed pecans littering the floor everywhere.  Coincidence?  I risked looking like a crazy person and gathered as many nuts as I could after my appointment so for me, the new expression is “when life gives you pecans, make pie and ice cream!”  I don’t know what it all means but I’m grateful that though I had to shell about a pound of nuts, I was finally able to see a dentist after 15 years and I was able to divert the savings of not having to buy a pound of nuts into buying extra bits for Thanksgiving dinner.

    Wonderful post, Angie! It’s true, the frenzy of life keeps that realization of how blessed we are from marinating (love how you put that) and it is so good to put some focus on it from time to time. Prayers for your friend, and for you! I’ve had my wisdom teeth extracted, plus four other permanent teeth b/c my mouth just didn’t have room for all my teeth. The wisdom teeth were harder to recover from since they hadn’t grown in and had to be surgically removed–I hope yours has grown in b/c I think that’s a little easier to recover from but still not fun. OK and please clear this up…you found pecans on the floor of your dentist’s office? What in the world? That’s the craziest thing I’ve ever heard-so random! I’d say if people thought you were crazy for picking them up, they need to think about the crazy factor of them being there in the first place. LOL! I looove pecan pie so I totally approve your change of desserts.

    Oh man, dental work is the worst, but I love your outlook- As long as you can eat dessert, everything will be alright. Very creative work around to get those seasonal pecan treats in, and better yet that the pecans were “rescued” for free.

    lol—I realize that how I put it was very confusing. They were on the ground outside of the offices, LOL!! From what they told me, my back right one is partly covered by tissue but not fully “grown” yet.     Oh we didn’t really do thanksgiving b/c what I was whippig up was a wedding cake! Needless to say I didn’t realy have time for a proper thanksgiving but thanks to my sister’s bf I did get a real Turkey day meal–Dennis went over to their place and brought back food for me. It was so good, and i got my favorite-pecan pie!
