  1. Weekend Bites

    Regrettably (or not), I didn’t spend the better part of a weekend dressed up as a sexy cat, drunk meowing, lol.  I did however cook, share food, eat, and even caught up with Breaking Bad.  I made about a half dozen “mug brownies” for friends and delivered meals for Pack Away Hunger.

    Breakfast of Rice, Stewed Tofu, and Cutlass Fish (I’m proud to say I’ve never cut myself in the kitchen but today marked the first time ever.  This type of fish has very sharp teeth and as it is very long, it slipped and I cut my finger, lol).

    Lunch of Bibimbap

    Dinner of Grilled Salmon, Roasted Asparagus and Tomatoes in Balsamic

    I strolled through the park today and what do I stumble upon but these amazing flamed colored leaves and a lonely mister Horsey with no one to play with.

    One of my favorites!  Mama got me a surprise gift, an adorable piggy I named Sophie.  She had 4 legs when I received her on Friday and today, she’s mysteriously lost a foreleg :(

    Now to preface, I think diets are a version of cruel and unusual punishment.  My philosophy on food is go good or go home {bacon and butter make everything better}!  However, I do realize that not everyone feels this way so in direct response to an email I received last week about possibly creating a figure friendly dessert, I present to you this fabulous fat free 5 minute mug cake/brownie.

    Ingredients
    • ¾ c unbleached/unbromated Flour*
    • ½ c quality unsweetened Cocoa
    • 1 c Sugar**
    • ½ ts Baking Soda
    • ¼ ts Baking Powder
    • ¼ ts fine Salt
    • ½ ts Instant Coffee
    • ⅔ c fat free Yogurt
    • 2 ts pure Vanilla Extract

    Instructions
    1. Sift together all of your dry ingredients: Flour, Cocoa, Sugar, Baking Soda, Salt, and Coffee.
    2. Slowly stir in your Yogurt and Vanilla but don’t over mix. The batter will be thick.
    3. Pour equally into microwavable coffee mugs and zap for 2-3 minutes depending on how big your mug is or how strong your microwave is but, please make sure that your mugs are plenty big as these do swell a bit.

    Notes
    *For added fiber and health, you can halve in whole wheat or spelt flour. **To reduce the sugar, you can sub in a bit of Agave. Both instances will alter the taste/texture.

    This pairs beautifully with frozen yogurt or whipped cream.  If you have neither, you could freeze blobs of raspberry yogurt and make a brownie “sundae.”  Whatever floats your boat.

    Healthy Baking Tips:

    Apple Sauce for Oil/Butter

    Reduced Fat Yogurt/Sour Cream for Buttermilk

    1/4-1/2 c of Prune/Date Puree can be slipped in for just a bit of Chocolate

    Replacing each whole Egg for 2 Egg Whites

    Agave/Stevia/Honey/Coconut Nectar for Sugar

    Avocado Puree for Butter

    Marshmallow Fluff or Meringue for Buttercream Frosting

    Puffed Brown Rice for “Rice Crispies”

    Coconut/Nut Flours for White Flour

    Graham Cracker vs Shortbread/Butter Crusts

    Cacao Nibs + Sweetened Cocoa for Chocolate Chips

    Earth Balance or Smart Balance vs Shortening

    Use at your own discretion.  I don’t typically utilize these unless it’s a special request and keep in mind that substitutions tend to alter taste and texture.

  2. Face Food

    In a Utopian society, products would always be pure and food would always be wholesome (among other things).  Since this is not the case as a consumer, you must be discerning when collecting items to bring into your home for your family to use and take into their bodies.  I do my best but sometimes, it’s not easy, especially considering the high cost of quality items vs. the more affordable price tag of crap.

    (To preface, I’m not claiming this is for everyone, it’s just what works for me).

    For the time being, these are some of the products I utilize in my household.

    I use this in everything from my hand soap dispenser to my homemade laundry detergents and shampoos.  It’s multi-purpose and lasts forever.

    This stuff is like crack to me.  I go nuts over their seasonal Gingerbread scent.  I do a TON of dishes throughout the day (the downside of living in the kitchen), and it makes the process that much more pleasant.  (Don’t judge me because I hoard the stuff–they only release it during the holidays, after all).

    Despite the fact that the cosmetics industry has long been toting the benefits of “oil-free” products, I swear by this as the most blissful and hydrating gloss that’s really made a difference with moisturizing my skin for long periods of time.  I particularly love to swipe it around the thinner skin of my eyes.  (If you find it too expensive, they sell sweet almond oil in bulk at my health food store and they may at yours).

    Oats: not only do they lower your cholesterol, they keep you full longer and also fit snugly into the “gluten-free” category.  I not only have a large bin of steel cut oats for cookies or breakfast, I also love to steep fistfuls of the instant variety under warm water and use it as an “exfoliating” scrub.  It really calms and soothes my skin.  I purchase mine in bulk to drive down the cost {though, they’re not too expensive to begin with}

     

    Of all the previous things mentioned, this isn’t the greatest of smells but I really like it as a toner/astringent and hair rinse for super shiny hair.  When rinsed thoroughly, the smell won’t linger.  I know lots of people that take it as a drink but it’s way too harsh for me, even diluted but more power to those that can withstand it (my Daddy included).

    Slices of citrusy sunshine that when paired with organic, granulated sugar, makes for the best skin brightening scrub.  (I call it my lemonade scrub).  There are a variety of uses for lemon (Meyer Lemon Squares anyone?  Yum)! but I also like to use lemon + vinegar + water as an all purpose cleaner.  Not only is it cheap and effective for the aforementioned reasons, it’s really great in brightening up yellowed fingernails due to over polish–I would know because I paint my nails like its my job, lol.

    I love Avocados and have been known to sit there and eat these with a spoon.  (Don’t judge me =D )  If I haven’t eaten them all, I mash a ripe Avocado and mix it with a tablespoon of raw honey and allow it to soak into my face as a mask for 20-30 minutes.

    Banchan aka Side Dish, and to begin our collection, here are a few Korean Side Dishes, that along with this beautiful crunchy Broccoli Salad comes up in mere minutes.

    Even Rice Cakes can be made in just 10 minutes.  {Not bad for something that used to take hours}!

    To make this beautifully crunchy and flavorful Broccoli Salad, you don’t even need 10 whole minutes.  You’re just 5 minutes away from a unique salad that can be eaten as is or tumbled into Bibimbap!

    Korean Broccoli Side Dish {Banchan}

    Ingredients

    • 1 Head Broccoli, cut into Florets
    • 3 tb Gochujang (Korean Hot Pepper Paste)
    • 1 tb Sesame Oil
    • 1 tb Sesame Seeds
    • 2 ts Apple Cider Vinegar
    • 2 tb Brown Sugar
    • Black Pepper
    • Green Onion Garnish.

    Instructions

    1. Boil your water and salt it well.
    2. Toss in your florets and cook for no longer than 3 minutes.
    3. Immediately plunge them into an ice bath to stop the cooking process and retain their vibrant green color.
    4. Tumble in all of your ingredients and mix well. Garnish with Green Onions.
    5. Serve immediately, at room temperature, in Bibimbap, or keep in the fridge.

  4. Arsenic Rice

    Is that a thing?  I must have missed the memo.

    I myself enjoy cheesy rice, buttered rice, herbed rice, creamy rice…

    but arsenic rice?  Mmm, yum…

    The FDA has analyzed 200 samples of Rice (domestic grown included) and found more inorganic arsenic in a single serving than what the EPA allows in a quart of drinking water.  The FDA has not released the brands that have been contaminated and has recommended that consumers not change their eating habits, however,  Consumer Reports took federal data and concluded that those who incorporate rice into their regular diet have arsenic levels that are 44% higher than those who don’t….eat it twice a day, and it could raise it to 70%.  I consume rice at least 2-3 times a day :(   I’m a huge advocate of Brown Rice but in this instance, because it retains the plants shell, it contains higher levels of arsenic.

    One reader commented that in order to combat these “worrisome levels,” any consumer could rest easy by washing their rice several times.  Another source assures us that it’s a commonplace practice to lace feed with arsenic for livestock to produce manure that fertilizes crops such as rice.

    It was a he said she said battle before (The US Rice Federation says these findings are “overblown”), but now the National Chicken Council feels under attack and strongly disputes any “insinuations” regarding arsenic-laced feed.

    Arsenic is a known carcinogen and exposure to it can lead to lung, skin, and bladder cancer as well as heart disease.  Young children are especially susceptible to negative side effects from lowered IQ to impacting overall brain development and may contribute to behavioral problems.

    I have a feeling my parents are not going to like this :/

  5. Eating with the Enemy

    I realize that this is a crazy long list but cut out your processed foods and junk foods and you’re pretty much good to go. I’m a huge advocate of the farm to table approach and am always happy to support our local farms and markets.

    I used to work for a local organic foods company where I live and people would constantly ask me why they should buy organic or natural. For me, it’s just how food was always meant to be. Real food minus all the crap.

    • 1 c Organic Kale
    • ½ c Frozen Blueberries, Dark Cherries or Açaí
    • 1 Frozen Banana
    • 2 tb Organic Ground Flax
    • 2 c Unsweetened Almond Milk

    Instructions
    1. Toss everything into a blender and blitz. Add more milk for a thinner consistency.

    Notes
    Add-in’s that I also like: Wheat Germ, Whey/Hemp Protein, Spirulina, Spinach, Kefir, or Cacao Nibs!

    I drink this every morning and take them unsweetened but if I’m making them for my brothers, I drizzle in a bit of Agave or toss in a few extra berries ;)

    Albeit it’s a bit odd, but gifts of food have always been favored over any article of couture clothing for me.  After all, you can’t eat sexy stilettos or cuddle up with a big ole’ bucket of crop tops.  Nope.  Anyone who knows me will tell you that the key to my heart is through my stomach.  With that said, I rarely have a meal cooked specially for me and spend most of my time cooking for others so Foodie Pen Pals has been a double treat for me.  I was paired up with Casey from Project Girl Get Fit.  It was like a mini Christmas to open the door one morning to see a box of FOOD!  Not only that, Casey was really great in only sending me wholesome snacks.  Here’s what she sent me:

    …bc that’s just how we roll in this house, lol.

    The first of August always marks Mama’s birthday (that is, if you conveniently ignore the fact that technically, her Korean Birthday is selected on a new and different day each year according to the Lunar Calender).  Koreans consider the gestation period as the first year and age is referred to in terms of Sal 살.

    Yesterday was also subject to one of the craziest lightning storms ever.  Of course me and my friends thought it’d be brilliant to go swimming.  (Mind you, right after a large meal + the baby stages of a booming lightning storm).  Needless to say, we hung out by the lounge chairs and allowed mosquitoes to dine at an all-you-can-eat Squishy buffet.  I think there was conversation and music in the background.  I can’t say because I was waging a futile battle with the mosquitoes and I lost… my poor arms and legs look like sheets of angry red button candy.  Remember those?

    Ah, I digress.  I can’t help it.  Currently, I’m scratch-scratch-scratching, making the situation worse and as I peer into a mirror, my suspicions are confirmed HAHA.

    …but as I was saying, let’s rewind a bit.  We fused east with west and had the traditional Korean Birthday Soup and afterwards, Mama had her cake and ate it too!

    On the left, you’ll find it in it’s dried form.  Rehydrate and about 15 minutes later, you have glossy, streaky ribbons of Seaplant/Sea Mustard/Seaweed for soup OR, this salad.

    I will definitely be making a video on this but until then, here’s how I made mine for last nights dinner:

    Korean Seaweed Soup
     
    Prep time

    Ingredients
    • 5 c soaked Miyuk (re-hydrated dried Seaweed)
    • 5 quarts of fresh, filtered Water
    • 3 tb Sesame Oil
    • 4 cloves of crushed Garlic
    • 3 tb Fish Sauce
    • 1 large sliced Onion
    • ½ c Clams/Mussesl/Shrimp
    • Kosher Salt
    • Freshly Ground Pepper

    Instructions
    1. Plunge your dried Miyuk in room temperature-warm water for 15-20 min. Drain and cut into bite sized pieces. Set aside.
    2. In a large pot, heat up your Sesame Oil and begin to soften your crushed Garlic.
    3. Slowly add in your Seaweed, sprinkle over your Fish Sauce, S & P and stir. Then, pour in your water with Onions and allow it to come to a bubble. Cook at medium heat for about 20 more minutes to allow the flavors to meld.
    4. Lastly, add in your Seafood.

    Notes
    You can sub out the Seafood for any other protein if you’d like. Beef Brisket is a traditional choice as well.

     

    Pulling the flavors of Summer together, I decided to bake Mama a Lemon Layer Cake, stuffed with macerated Strawberries, frosted with a fluffy, Lemon scented Whipped Cream.

    This is this Cake revamped with Meyer Lemons, instead.  There’s a lot of Lemon lovin’ going on.  I pulled back a half cup with my dairy and made up for it with fresh Lemon juice and sprinkled in a heavy dose of Lemon zest.  I opted out of a heavier Buttercream and infused the Whipped Cream with plenty of Lemon zest too.  I created a bit more height and a refreshing and summer-y layer with macerated Strawberries (I used 2 tb Sugar + 1/4 c Limoncello)

    and the big bang to the night….!

    I think I must have sat there in between bug bites, starring at this silent and wondrous sky for at least an hour.

  8. Hot, Harlequin Nights

    As I’m in the South, I day dream that we’re all just part of a Harlequin romance novel and that these are just parts of sultry, summer nights but alas, reality settles in and it’s just crazy hot, is all.  101, 105, 110…and rising.  It’s just hot.  Not sexy.  The weekend was full of impromptu storms and angry spills of hail and it’s suppose to thunderstorm all week, too.  My neighbors tree even cracked.  We’re living in those days when just stepping outside feels like suffocating–it’s a perpetual sauna with no mirage in sight.  I feel sorry those who have to make a living being outside all the time.  I had a friend who used to pour concrete and boy oh boy is that terrible to do when it’s hot like this.

    I tried to keep cool with watermelon slushies:

    Blended cubes of frozen watermelon + lime (or mint)+ agave (water as needed) = delicious refreshment.

    Frozen Cheesecake.  I love Cheesecake so I shrugged, threw caution to the wind and ordered it.  The texture is different but the flavor is there and the cool bites are a welcome luxury in this heat.

    Garlic Yogurt Dressing

    Ingredients
    • ½ c Greek Yogurt
    • 2-4 tb Extra Virgin Olive Oil
    • 1-2 cloves of Garlic
    • Fresh Dill or Parsley
    • S & P

    Instructions
    1. In a bowl, whisk to combine.

     

    {Light summer salad of baby spinach, almonds, olives, local tomatoes, grilled chicken and garlic-yogurt dressing}.

    I also love this salad with berries & grilled shrimp.

    Now, if only the skies would open up momentarily and allow some snow to fall to alleviate us of this bitter heat, we could all have snow cream too :)

  9. Not Your Mama’s Salad

    This is my Mama’s Salad =D

    Korean Food Seaweed Salad

    Growing up, this was one more thing that I disliked.  No worries.  Today, I love the stuff.  Deep Green and oh-so-glossy, it almost resembles edible Emeralds (perhaps I exaggerate) but ask me or Mom and we’ll both exclaim that its taste surpasses that of any Gemstone (I imagine that those are too hard anyways–lol, I kid).  The great thing about this Salad is that it’s absolutely, positively no fuss.  It’s low maintenance and never asks for a lot.  To rehydrate the dried Miyuk, you don’t even need to boil a pot of water….all you need is:

    Seaweed Salad
     
    Prep time

    Ingredients
    • 1 c dried Miyuk (Wakame, Dried Seaweed)
    • 1-2 tb Red Pepper Flakes
    • 1-2 tb Red Pepper Paste (Gochujang) both the amount of Flakes and Paste will vary depending on how Spicy you like it
    • 2-3 finely minced Garlic Cloves
    • 2 ts toasted Sesame Seed
    • 2 ts Sesame Oil
    • 2-3 ts Rice Vinegar
    • ½ ts Salt
    • 1-2 tb Sugar

    Instructions
    1. Soak your Dried Seaweed for 10 minutes in warm Water, rinse in warm/hot Water
    2. Plunge your swollen Miyuk and dress with all your other ingredients. Easy, huh?

    Notes
    Why such variation? Unless you’re baking, I firmly believe that cooking should involve a bit of tweaking of this and that. If this part is altogether neglected, I find that the food lacks soul…personality. Now in this case, it mostly varies on what level of spiciness you’re accustomed to. I always tell folks to never hesitate throwing in their own special ingredient(s). If you think Pickles would make this dish shine, do it, do it, do it! *Refer to my last post*

    Mom and I both hope you try this dish…

    How about designating one weekend to trying new, different or strange foods?
    How about Miyuk with Durian to wash it all down with?!

    I was contemplating weaving in a “Sound of Music” reference there lol.

    My parents can’t actually tolerate caffeine at all so I’m accustomed to brewing them a variety of Rooibos/Red Bush/Chamomile.

    Theses are currently the Teas that are living in my Home at the moment.  I have lots of favorite Teas but these are just a few and no matter what, we always have Boricha in the house.

    • (Boricha in Korean, Mugicha in Japanese)

    My blend actually has a bit of Roasted Corn Kernels too which I think really adds a dimension of sweetness to the nutty Tea.

    Health Benefits of Boricha

    • Angels Dream (blend of Black & Green)

    I love it because it has a Maple/Berry scent and taste to it.  It’s definitely an indulgent tea, doesn’t tote the most health benefits but is like drinking Dessert in a cup.  I don’t even find that I need to sweeten it at all.

    • White Pomegranate

    Contains the most antioxidants and is the least processed than any of my other Teas.  Tastes light and refreshing, to me.

    • Green Tea Matcha Powder

    I love this super versatile downy green stuff.  It goes into my Cupcakes, Ice Cream, Mochi, and Lattes.  Tastes great when paired with Honey or Melon flavors (in my opinion).

    This is my go-to-I’m-late-but-geez-it’s-cold-outside-Tea ;)

    My Favorite TEAS by The Squishy Monster

    Now, I’m definitely no expert on Teas.  When properly stored, bulk teas should last a long time.  I’m very well aware that you’re to keep them stored in an Airtight Container.  I got mine from the  dollar store and so they’re working for me right now, lol.
    I like most of my teas unsweetened, not even consulting the aid of any citrus fruits.  However, when I’m sick, even Boricha can help soothe a sore throat, spruced up with a sunshiny piece of Lemon and golden drop of Honey.  I really like regular Sugar for my PG tips and for White Teas (depending on my mood), Agave pairs nicely with it.
    When I can remember to, I brew a big ole’ pot of Tea and shove it in the Fridge and drink off of a pitcher for days.  Just try to remember that Teas tend to be dehydrating so make sure you’re replenishing yourself with water as well.
    Teas are a lot of fun, even if you don’t like one, I’m sure you’ll be able to find one that suits your tongue and personality.  You can go any which way (which is part of the experimenting fun).  Go dark and woodsy, or spicy and seasonal, light and fruity, or even go for something that is just plain ole’ pleasing to the eye and nose.  There are lots of yummy teas that are super palatable.  They even have bits of candied flowers or fruits in them!
    When you’ve found a few you love (start off with teeny sample packs until you’re ready to commit), try infusing foods you love with it and fall in love with them all over again.  I’ve heard of people hard boiling eggs in tea, (it’s ok if that’s not your thing)–how yummy does a candy colored Macaron infused with the flavors of Early Grey, or even my Angels Dream sound–um DIVINE!
