  1. You Can’t Have Everything?

    I was recommended by many fellow bloggers not to divulge “too much.”  Now if I listened to everyone, I’d have platinum blonde hair, maybe would’ve jumped off a bridge, and never be as close as I am to you guys.  I’m not so much into the 101 rules of seduction in the Lana del Rey way and maybe it’s not “what the people want,” but Jimmy cracked corn…

    I can’t tell you how many messages I get that tell me that I look so happy 24/7 and that my life seems perfect.  o.m.g.  This is completely incorrect.  I’ve addressed this before but perhaps it’s because food just makes me that happy and in The Squishy Monster world, everything revolves around food but alas, allow me to point out that food can’t lean in for a big hug, keep you warm and snuggle with you on cold nights, or make you laugh or smile.  That is, unless you’re smiley fries =)

    I crave romance.  I’m starved for it.

    Confession #862, I’ve never been in love.  I suppose my Prince Charming doesn’t have a GPS or smart phone…yeah, that’s what it is…

    I realize that different things happen for people at different times but I find myself drifting off into la-la land wondering what it would be like to live the rest of my days with a best friend-a partner.  My friends share stories about butterflies-in-their-stomach-palms-slick-face-flushed excitement and it leaves me to wonder, did I forget to care for my butterfly properly?  Is it sick, gone, away?

    So, while my friends were out on fancy dates at fancy restaurants, in their fancy new dresses, I sat at home and listened to this:

    So no people, I do not moonlight as the energizer bunny.  Sometimes, I sit on my bed and set up a personal Squishy bed-island buffet and just go hard on a bag of chips…or 3 :/

    Don’t feel sorry for me though, until we find each other (or I get a pony, whichever comes first)…

    TOTALLY kidding about the pony people, lol

    I will continue on with my ménage à trois–just me, my videos and blog.  They seem pretty happy with me.  I take care of them and keep them well fed, after all ;)

  2. The Silver Lining

    I’ve only been absent for a few days now, and I’ve received messages about when a new video will be available.  It’s not that I’ve stopped.  Quite the contrary.  I’ve still been here, crafting together new recipes, polishing old ones to a new shine, editing videos and trying my best to perfect my craft altogether.  It’s a work in progress, but one that I thoroughly enjoy.  No matter how much my feet hurt or how pruned my fingers are, at the end of the day, I experience a strange mix of utter fatigue and happiness.  It’s what I love to do, what I’m passionate about.  I cannot even begin to convey the joy and pleasure I extract from a sugary Facial of Classic Syrup for a Cake or Lavender Lemonade or the incredible thrill I absorb from watching simple Groceries morph into something delicious.  It is the entire journey + reward of yummies that fuel my itch to get into that Kitchen each and every day and roll into a downy bed of Flour or immerse myself entirely in the bath of an intoxicating fermented Soup.

    So I am particularly sad to share the news that I’ve recently been click-bombed several times on my channel.  This typically means that someone purposely and repeatedly clicked on ads with the full intent to disable an account.  I was reinstated for a short while only to fall victim to it, yet again.  I’m fairly certain I know what caused it but this does nothing to impact the decision that falls beyond my control.  Needless to say, the decision stands …indefinitely.  I struggled with it all week and reached the decision that I will continue making videos.  With or without outside help.  This is via encouragement of both my Friends and Family.  I won’t allow something as trivial as this to discourage me from the path that I know that I was meant to be on.  I’ve never been so sure about anything else.  It’s my dream and I know that if it’s meant to be, that it will be realized.  I won’t ever give up.

    So today, I bring to you smiles, energy, encouragement, and a new video!!

    Spicy Crab Soup

    Ingredients
    • 6-8 prepared Crab (Cut into Chunks)
    • 3 tb Fish Sauce
    • 2 tb Sesame Oil
    • 3 tb Red Pepper Flakes
    • ¼ c Korean Radish (Mu)
    • 1 ts Ginger
    • 1 Onion
    • 2 Jalenpeño Peppers
    • 3 Garlic Cloves
    • 2-3 Green Onions
    Broth
    • 8 c water
    • 2 pieces of Kelp
    • handful of large anchovies

    Instructions
    1. Bring your Broth to a boil for about 20 min. A Tea Strainer helps here. (Discard the Kelp as it tends to get a bit bitter but you can reintroduce your Anchovies to the Soup if you’d like).
    2. In a large Pot (the same one you’ll be cooking your Soup in), toss together all of your ingredients, save the Broth and Green Onions. Allow it to sit and mingle (or at least until your Broth is ready).
    3. Pour in your prepared Broth, bring your Soup to a fierce bubble (for an additional 15-20 min or so), then sprinkle with your Green Onions.

    Remember, don’t allow negativity to rent space in your head for free and don’t let anyone stand in the way of your dreams.  If they love you, they’ll provide support and encouragement.  Sometimes, (like this past week for me) things can seem awful, but all bad and dark things eventually come to the light.  I tend to lean on the Melancholy side as it stands so it’s an effort to be mindful of such things, but just keep doing you.  “You only miss the shots you don’t take,” I was told by someone I love who loves me very much.

    Thank you to everyone who has been so supportive, lending me positive energy and allowing me to wallow because eventually, I always get up =D

  3. Won’t You be My Valentine?

    In honor of Valentine’s Day, I wanted to just put it out there just how much I appreciate every single one of my new friends.

    I am not a great poet and perhaps a love letter would prove to be inappropriate but (and at the risk of sounding extremely chicken-soupy)–how my heart swells for the positive thoughts that are so happily received.

    As you may already know, cooking became a necessity for me at an early age.  As burdensome at times it seemed (particularly during the already difficult adolescent period we all endure), I never dreaded being in the kitchen.  True, in the beginning cooking to me meant cutting up Spam or the like and heaping a pile onto a bowl of rice, it inevitably transformed into an almost visceral experience/event for me.  I’m a firm believer that yes, we are all so very different (in what any mother would call “special ways”) but food is our one commonality as Humans.  The pleasure of the before, during, and after process involved with food is something that I’ve always wanted to share.  I am so happy that I’m finally able to do that.

    I absorb and savor every word you, my friends share with me.

  4. Red Velvet for Valentines Day

    For your red-red, bleeding heart!

    I mention in my video that I made so many of these babies, I wanted them to go somewhere else and leave me alone.  They stain your hands if you’re not careful and leave just a remnant of what looks as if you’ve been involved in a murder scene.  After like the 200th Cupcake, you will manage to streak yourself with tint.  It’ll happen and if not the 200th one, the 300th or 400th one, lol.  However, Red Velvet is a classic that shall never die.  I went through a phase where I ate nothing but Cheesecake for every dessert for a month.  Half dare/half obsession, I undertook this obviously futile feat.  I happen to adore Cheesecake but this was definitely not the case even half way through the month.  My point is, too much of anything is never good.  I stick to that.

    VALENTINE’S Red Velvet by The Squishy Monster

    Serves: 2 Dozen Standard Size

    Ingredients
    • 2 c Flour
    • 1 ts Baking Soda
    • ½ ts Baking Powder
    • 1 ts Salt (omit if you’re using Salted Butter)
    • 2 tb unsweetened Cocoa
    • 1 c Veggie/Canola Oil
    • 1 stick melted Butter
    • 1½ c Sugar
    • 1¼ c full fat Buttermilk
    • 3 Eggs
    • 2 tb Red Tint
    • Cream Cheese Frosting:
    • 2 8 oz blocks, softened Cream Cheese
    • ½ stick softened Butter
    • Powdered Sugar (use as much or as little as you’d like–Cream Cheese isn’t that snooty, it will yield to you completely).

    Instructions
    1. In one bowl, sift together your dry ingredients: your Flour, Soda, Salt, Cocoa
    2. In a second bowl, beat together your Oil, Butter, and Sugar.
    3. Slowly drizzle in your Buttermilk
    4. Crack in one egg at a time
    5. Tip in your Tint
    6. Scoop level amounts into a lined Cupcake Tin (using an ice cream scoops helps)
    7. Bake @ 350 for 17-22 minutes (everyone’s oven is a bit different)
    8. For the Frosting:
    9. Break up your Cream Cheese and Butter
    10. Add your SIFTED Powdered Sugar a bit at a time until fully incorporated.
    11. Add in some Vanilla if you feel like it

    Notes
    Make sure all of your “cold” ingredients are at Room Temp. If you’re turned off by the Butter and Oil, sub with Apple Sauce instead (but I really wouldn’t) Similarly, if you don’t like the idea of all that tint, you could always tint with Beet Juice or crushed, dried Berries–however, to obtain that deep red, I actually do think it would change the flavor. If you don’t have Buttermilk, you could always combine 1 c full fat Milk + 1 tb Vinegar but I find that nothing beats the true thick tang of real Buttermilk You cannot use Baking Soda and Powder interchangeably It is super important to sift your dry ingredients together before adding them to your “wet” bowl Allow them to cool before frosting Just make sure you cream the Cheese and Butter first then sprinkle in your Sugar (gotta be Powdered) and sifting (and the Butter and Cheese being soft) will ensure you don’t have a lumpy Frosting.

    have your cake AND eat it too?
