Strawberry Balsamic Sundae
I remember the first time I served this at family supper. My baby brother wrinkled his nose as I lay out a platter of fresh berries drizzled with balsamic syrup and whipped cream. He remained skeptical until he took his first bite and as his teeth sank into that first ripe berry dripping with thick glossy syrup, he became an instant convert.
This is such a refreshing change of pace from the conventional syrups. It’s sweet and tart, smoky and rich all at once. It has a complex flavor profile that I hope you’ll give a try.

Serves: 1 Serving
Ingredients
- Ice cream {any kind will do}
- 3-5 sliced strawberries
- ½ c good balsamic vinegar*
- Optional: 2 tb honey/brown sugar
Instructions
- Begin with the balsamic by slowly bringing it to a boil. Turn down the heat and allow it to simmer. Add the honey/brown sugar if using. The entire process should take no longer than 10-15 minutes. It is ready when it coats the back of a spoon, leaves a trail behind when stirred, and has reduced by *nearly* half. Don’t cook it off too deeply or it will get way too thick. Let cool.
- Toss the strawberries in as much or as little of the syrup as desired.
- Nudge onto scooped ice cream.
Notes
When cooking {vs. drinking/serving straight up} with the balsamic vinegar, a high price tag isn’t as necessary. Experiment with what tastes good to you. I like to pick ones with that are viscous with notes of figs or honey. Use what is within your price range and appeals to you.
